Pulao is the name for both an Indian rice dish and a traditional spice blend.
The Indian comfort food falls somewhere between home cooking and street food. It’s a dish that can be eaten on its own or served with other vegetables. Pulao also makes a wonderful take-along lunch for work or school.
There are countless ways to prepare pulao, from rice pilaf and coconut rice and to a simple steamed rice. Pulao is most often served as a vegetarian dish but can also be made with chicken. Pulaos are usually served with raita (a yogurt sauce laced with cucumbers or tomatoes and seasoned with onions, chiles, and pepper) and crispy pappadams.
