There are as many curry blends as there are families in India, where they range from subtly mild to fiery hot…Curry Corsaire is my own.
It took several tries to come up with a blend that enhances the delicately briny flavors of shellfish, especially the sweet, succulent bouchot mussels from Mont-Saint-Michel Bay.
