India and Cochin, in particular, with its spice market and Vasco de Gama’s tomb, absolutely blew me away. I wanted to transcribe the wonder I felt in a spice blend that would submerge those who taste it in the sensations that permeate this country that’s like no other.
The science that goes into Indian dairy production has always amazed me, so I formulated a blend that could be added to yogurt, fromage blanc, or crème fraiche. For me, Cochin will always be a city of spices, seas, and scented dreams.
