The pepper berries have a unique shape and grassy fragrance. Their fresh, delicate flavor is reminiscent of Japanese dashi broths and Chinese pu-ehr teas with a finish that resembles a mild Sri Lankan peppercorn

I use this pepper with steamed winter root vegetables like carrots, Jerusalem artichokes, parsnips, and chervil roots. I also like crushing one or two berries then adding them to vegetable broths.
