Timut peppercorns have citrus fragrance notes that are similar to grapefruit. A quick grind of this pepper cousin or a few crushed berries can add incomparable freshness and a fragrant dimension to fish, shellfish, poultry and vegetable recipes.

Story

Timut or ‘grapefruit’ peppers grow on the small, very thorny Zanthoxylum armatum tree. They were recently discovered by European perfumers and chefs who have taken to their fragrance and flavor with enthusiasm. Timut peppers are harvested in the mountainous forests of southern Nepal.
