Timut or ‘grapefruit’ peppers grow on the small, very thorny Zanthoxylum armatum tree. They were recently discovered by European perfumers and chefs who have taken to their fragrance and flavor with enthusiasm. Timut peppers are harvested in the mountainous forests of southern Nepal.
