A favorite for seasoning ratouille, marinades and vinaigrettes for bean dishes.

Inspired by medieval caravans that traveled several weeks at a time along the Spice Road and over the Indian Ocean to reach Alexandria, this blend was one of the first I created.
Cumin and sesame are the dominant flavors which are tempered by the softer notes of mace and cinnamon. Nora chile peppers (from the New World) add a gentle heat to the combination, which symbolizes the confluence of Eastern and Middle Eastern influences.
Grande Caravane adds incredible flavor to lamb dishes, as well as recipes that call for oily fish, like red mullet and mackerel. The blend can also be used to enhance slow-cooked summer vegetables.
