Épices Rœllinger Saffrons<Morocco Saffron

Use 3 saffron threads per serving. The threads should be steeped in 2 tablespoons warm water the night before, then added to a dish or sauce 30 minutes before the end of the cooking time.

This saffron is grown and prepared by a cooperative of 5 farmers. The fields spread out over 4 acres are near a small mountain village in the Middle Atlas mountain range. The growers use sustainable agriculture practices and all weeding, harvesting, and meticulous plucking are carried out by hand. The flowers are harvested at dawn for about 10 days in the month of October.
