Story
The word for mango in Hindi is ‘am’; while ‘choor’ is the word for powder. To make the amchoor, mangoes are harvested while still green, then peeled and cut into slices. The slices are then dried in the sun and ground to a fine brownish-beige powder.
In Indian cuisine, amchoor is used to season potato dishes, samosas, lentils, fish curries, and vegetable masalas.
Amchoor can also be used to season meat marinades, pickles, and chutneys.
